A Legacy Forged in Steel
Behind every JIKKO knife lies the vision of Master Renji Amono — a craftsman who devoted his entire life to the perfection of the blade. For decades, Renji worked within one of the most respected knife workshops — shaping steel, refining balance, and mastering the invisible details that separate a good knife from a great one.
Now retired, he continues to share his philosophy, designs, and above all his vision and experience in this complex craft with his grandson, Shogo Amono — offering quiet guidance as he shapes the next chapter of the family legacy.
For Renji, a knife has never been just a tool — it is a reflection of discipline, patience, and respect for materials.
Ending the compromise
Shogo Amono, Renji’s grandson, was born and raised in the United States. Though far from his grandfather’s workshop, he grew up shaped by his values — precision, craftsmanship, and the belief that true quality should be accessible to all.
“The world is changing — the only way forward is to evolve with it, without losing what truly matters.”
People today are forced to choose between mass-produced knives with no soul and luxury blades priced beyond reach. JIKKO was created to end that compromise — to make exclusivity and true craftsmanship accessible, without ever compromising on quality. The age of identical knives is over.
Craftsmanship without borders
In a world where everyone seeks uniqueness, JIKKO crafts tools with a soul — memorable, personal, and made to last. Building on that vision, Shogo Amono continues to expand JIKKO internationally through jikkoknives.com, a platform dedicated to limited-edition collections that embody this philosophy: rare, refined, and truly accessible craftsmanship.
Today, JIKKO stands as a global brand, connecting design, engineering, and production across multiple countries — all united by one purpose: to bring world-class craftsmanship into every kitchen.
Craftsmanship, Modernized
Under RENJI’s direction — every JIKKO knife follows the same timeless principles: balance, sharpness, and beauty.
Each blade undergoes a three-phase heat treatment to ensure lasting sharpness and resilience. By combining high-end steel with modern precision engineering, JIKKO delivers knives that feel handcrafted — yet built for today’s kitchens.
Each collection is released in small, limited batches, depending on the availability of premium materials. While most of our steel is sourced from Japan, production locations may vary depending on the knife and its series.
Handles, knife blocks, wood selections, and packaging components are sourced globally, from partners carefully chosen for their craftsmanship and reliability.
Each workshop we collaborate with has specialized for years in its field, and several also craft for some of the world’s most renowned cutlery brands.
To ensure both quality and accessibility, JIKKO oversees every stage of production through its own technical supervision and strict quality control, maintaining a consistent standard of excellence across all collections.
Our Mission
JIKKO was founded with a simple purpose: to democratize authentic craftsmanship and bring the precision of master artisans into everyday kitchens. We believe that heritage isn’t something to preserve — it’s something to evolve.
That philosophy defines every knife we make — a bridge between tradition and innovation, past and future, art and performance. Each JIKKO blade carries the spirit of two generations united by a shared pursuit of perfection.
